Monitoring Fruit Development: Throughout the growing season, viticulturists track how the grapes are developing, assessing sugar levels, acidity, and overall ripeness. Harvest Timing: One of the most critical decisions a viticulturist makes is determining when to harvest. This timing affects wine quality profoundly—harvest too early and the grapes lack the necessary ripeness; harvest too late and they may become overripe or vulnerable to disease.
